All that left over Chicken?! Recipe : Vietnamese Rice Paper Rolls



The entree we always order at Pho Pasteur and wish it was served the size of a main course meal - Vietnamese Rice Paper Rolls
One of the many perks of being married to a Vietnamese/Chinese man, is that you pick up and learn a lot of their delicious dishes! This is an easy recipe for Vietnamese Rice Paper Rolls.
On the days that Tony and I don't feel like cooking, and we're sick of getting Mc Donalds Drive Thru, we usually stop over at Woolworthes and get their Roasted Chicken and Lebanese Bread (best meal ever!) - but we always have left over chicken! 
This is what I usually whip up to finish off our chicken for the next day.

Ingredients:
  • Rice Paper (You can buy from most Asian grocers, or Woolworthes & Coles)
  • Lettuce
  • Left Over Chicken (that you've shredded)
  • Grated Carrots
  • Cooked Vermicelli Noodles (from most Asian Grocers, Woolworthes & Coles)
  • A large bowl of boiling water
 
You can add other ingredients to put in the roll such as; sliced cucumber, prawns, mint leaves, etc etc. These are just things from the fridge that I wanted to finish off. 


Step One
After quickly dipping your Rice Paper into the bowl of boiling water, lay a piece of lettuce on top.












Step Two
Put a little bit of your Vermicelli Noodle on the middle of the Lettuce.











Step Three
Place some Grated Carrots, Chicken, and any other fillings you had in mind on top.














Step Four
Now to start rolling. 
Get the left side of the Rice Paper and roll it to the right side of the filling, indicated in the picture.











Step Five
Fold the bottom of the Rice Paper up towards the middle of the filling. 













Step Six
Fold the top of the Rice Paper down. 














Step Seven
Making sure you do it tightly (so that all the filling doesn't fall out), fold the rest of the roll towards the right.












And there you have it, a Vietnamese Rice Paper Roll!

Serve it with Vietnamese Fish Sauce (1/4 Fish sauce, 1/4 boiling water and 1/2 sugar), Peanut Hoisin Sauce (which you can buy from any Asian store) or what I've recently discovered that tastes awesome is "Mang Tomas - All Purpose Sauce". 









Serving Suggestion: Peanut Hoisin Sauce

I also want to give a TIP, because Rice Paper is very sticky, if you are making a few of these rolls separate them with pieces of lettuce so they don't stick together.
