Recipe: Pizza Muffins

A simple and easy recipe for Pizza Muffins. This fool proof recipe is always a hit with my family, it tastes good and hey why not get the kids involved too? They do say picky eaters tend to eat what they've participated in cooking in and what kid doesn't like pizza? - especially when their bite sized!

 

Ingredients:
(The Toppings are entirely up to you, this is what I had used to get rid of a few ingredients in our fridge).
  • Toppings: Cooked slices of sausages
  • Toppings: Capsicum
  • Toppings: Tomatoes
  • Muffin Bread - Cut in half
  • Grated Cheese
  • Tomato Paste
Step One
Preheat the oven on low heat. 
Put an adequate layer of Tomato Paste as a base on your Pizza Muffin Halves. 








Step Two
Start adding your chosen Toppings and Top it off with Grated Cheese. 
Allow the kids to have fun with this one, let them create their own pizza - they'll be so excited to eat it up!






Step Three
Place the Pizza Muffins in the oven and allow to bake until cheese has melted (roughly 15 minutes).









Yummy yummy goodness!

My mums recipe - Homemade Sausage Rolls

From growing up until now my mum's sausage rolls have always been a big hit. We always found that eating one sausage roll was never enough, one sausage roll turned into 4... 5... 6! With my mums permission we decided to post the delicious recipe up on my blog. 
I hope you all enjoy my mothers recipe as much as I love eating it!


Ingredients:

  • 1/2 kilo Beef Mince; You can use any minced meat you'd like.
  • Carrots; Cut into 1inch pieces
  • Coriander
  • Onion; Diced 
  • 3 Eggs
  • Grated Cheese
  • Puff Pastry
  • Food Processor 




 Directions:

 Step One

Preheat oven on high.
In the food processor put in your Carrots, Coriander and Diced Onions. 
Process the three ingredients, make sure everything is diced and combined well, the last thing you want is to bite into your sausage roll and eat a chunk of Onion. 




 

 Step Two

In a large bowl combine your Mince, processed Vegies, two of your Eggs, your Grated Cheese and if you'd like Salt & Pepper. 
Mix together with your hands wearing a clean glove. 

 

  Step Three

Now it is time for rolling; Cut your Puff Pastry in half. 
Line your filling onto the middle of the pastry; make sure you don't put too much filling - you still want to be able to close the roll. 
Fold the bottom of the pastry over the filling and repeat by folding the top of the pastry down. Press down lightly to secure the foldings. 

 

  



Step Four

With a sharp knife cut your roll into three equal lengths.
Place rolls onto a non-stick sprayed tray; make sure you have the folded ends facing down to prevent your roll from coming undone in the oven. 





Step Five

Whisk your last egg and brush a layer over your uncooked rolls. 
Place in oven and turn the temperature down to medium heat. 
Allow to cook until pastry is golden brown. 






  Congratulations!

You have now made a crowd pleaser. Enjoy with a sauce of your choice. 
Feel free to be creative with my mothers recipe by adding peas or other vegetables of your choice.
