Recipe for Pork Tamarind Soup (Sinigang Na Baboy)




Pork Tamarind Soup is a very common Filipino dish that is simple and delicious! With a soup base so full of flavor I find it a good way to make Mr Pham enjoy vegetables, not to mention its a good winter comfort food. 
Each individual has their own ways in preparing this dish to suit their taste, this is a recipe I have put together that has suited the taste of Mr Pham and I. 







RECIPE  
INGREDIENTS
  • Pork ribs; cut into 1 inch pieces, I like to leave the fat on the meat, it adds more flavor to the soup, but you can cut it off if you prefer
  • 1 Packet of Tamarind Soup Base powder; I have used the brand Knorr which can be found at most local Asian grocers
  • 1 Large Onion; Cut into slices
  • 2 Medium Sized Tomatoes; Cut into wedges
  • 3 Bunches of Baby Bok Choy; Washed and separated 
  • 100g of String Beans; edges chopped off and cut in half 
  • 2 Red Chillies; chopped




DIRECTIONS


Step One - In a small pot boil and cook pork ribs in water. This will tenderize the meat.
 



 







 
Step Two - In a separate large pot add water and bring to a boil, combine the Tamarind Soup Base powder and allow to dissolve.









 
Step Three - To the Tamarind Soup Base add Onions, Tomatoes and String Beans.













Step Four - Strain your now cooked and tenderized Pork Ribs and add this to the Tamarind Soup. Allow to stay on Medium heat for 30 minutes.












Step Five - Combine your Baby Bok Choy and Chilli to the soup and allow to simmer on low heat for another 15 minutes.













NOM-NOM! Your Pork Tamarind Soup is now ready to be devoured. 
This dish can be served with steamed jasmine rice or can be served as a side dish.
